• *Wet Cured Ham, bone-in (with the fat on)

• Brown sugar and ground cloves (optional)

• Pineapple rings and cherries (optional)

• Allow the ham to come to room temperature for 2-3 hours

• Preheat the oven to 325
• Place the ham, fat side up, in a roasting pan
• Add enough water to cover the bottom. ˝ inch should work
• Cover with a lid or use foil to cover
• Cook at 325° for 15 minutes per lb.

• Remove from oven and peel off the fat

Now you get personal.
o You can glaze the ham with brown sugar and some ground cloves. Just rub it all over the ham and it will form a glaze.
o And/or add pineapple rings and cherries, secured with toothpicks. I don’t like that, but it does look festive…

• Return to oven uncovered for one hour. (This assumes a 20 lb. ham, so adjust for the weight)

• Allow to rest at least 15 minutes before slicing

*You want a Wet Cured Ham; not fresh, not smoked, not country…CURED…they aren’t always easy to find, but you can request them from your butcher. Sometimes they are called “City Ham”. Be sure to order it with the fat still on.
