• Lettuce (I like romaine)
• Tomatoes, diced
• Green or red onions, diced
• Avocados, corn, black olives sliced, and/or any other salad item you want to add

• Catalina Salad Dressing

• 1 pound ground beef
• 1 can ranch style beans

• 1 cup+ grated sharp cheddar cheese
• Doritos or Frito Corn Chips (Kurt and I remember Fritos when Mom made this)

• Taco Seasoning (optional by Cathy)

Directions:

• Tear or chop the lettuce into a large salad bowl.
• Add the other vegetable items
• Refrigerate to chill

• Brown the ground beef with salt and pepper in a skillet.
• Drain and return to skillet.
• Drain beans, but don’t rinse.
• Add them to the meat mixture
• Stir and cook until they are hot

• Add Catalina dressing to the lettuce mix and toss well

• Add the meat and beans (they should still be hot)

• Add the Doritos (Kurt and I remember Fritos instead)

• Add the cheese and toss again

• Serve right away. You don’t want the chips to get soggy.

Kurt requested this recipe, which Mom used to make. No one can find the original, but Beverly remembers it too. She gave me the recipe as she remembers it. She stressed that the salad should be cold and the meat and beans hot. The Catalina dressing only goes on the salad, then you add the other things just before serving.

Optional per me…
• I added a package of taco seasoning mix in the ground beef
• Either put the diced avocados in right before you are ready to add the meat, or put lemon or lime juice on the avocado to keep them from getting brown.
• I remove the seeds from the tomatoes before dicing them
