Ingredients:  
• A pack of hot dogs, brats, etc.
• A pack of hot dog buns
• Some grated cheddar cheese
• Cole Slaw (see the Salad section for a recipe)

• 1 small yellow onion diced small
• 1 lb. ground chuck
• 1 15 oz. can tomato sauce
• 1 T cumin
• 1 ½ T Chili Powder
• ¼ t garlic powder
• ½ t cayenne
• 1 T chipotle paste

Directions:

• For the Chili, brown the beef and onions together over medium heat. Crumble the beef well.
• Once the beef is brown, drain and return to pan.
• Add the last six ingredients
• Stir well
• Lower the heat to a minimal simmer and cook for 1 hour, stirring occasionally.

• Fire up your grill and cook the hot dogs to your liking. Personally, I like them charred.

• Put buns in foil and set off to the side to warm.

• To serve, place a hot dog in a bun, add chili, add cheese, and then put slaw on top. See Grandma Edna's Cole Slaw recipe in the Salads section. I like hot mustard too.

One year at the beach, I had a Fourth of July Hot Dog Party. It was one of the most fun parties I’ve hosted. I had different types of sausages, including regular, beef, brats, smoky, hot, and turkey dogs. Also, I had every condiment you can imagine including onions, pickle relish, different cheeses, chili, slaw, hot peppers, mild peppers, grilled peppers and onions, Sauer kraut, guacamole, ketchup, mustard, mayo, hot German mustard, and on and on. Chips, baked beans, and potato salad were the sides. Of course there was apple pie! I have never seen a bunch of adults act like children as they put together their perfect dog. There was a lot of high level discussion about what makes the PERFECT dog. It was fun!!! You can tell that my PERFECT dog in a Carolina Dog.
