4 salmon steaks without skin
100 grams almond powder
70 grams breadcrumbs
60 grams butter
1 orange
1 lemon
Salt and pepper

Directions:
Directions:
Keep butter out of the fridge to soften.
Zest then press the orange.
Mix the butter with the zest, 2 tablespoons orange juice, 2 tablespoons
almond powder
Put the orange butter on a clingfilm and roll it in a shape of a small cylinder.
Close the two sides and keep it in the fridge.
Pre-heat the oven at 350°F (180°C) (th 6)
In a deep plate mix the breadcrumbs with the remaining almond powder.
Put salt, pepper and a little bit of lemon juice on the salmon steaks, then coat them, both sides, with the almond/breadcrumbs mixture.
Lay the salmon on an aluminum sheet (aluminum foil on the oven rack) and cook for 5 minutes + 3 / 4 minutes under the Broiler to brown (check every minute because it may be less time according to your grill)
Display the salmon in a dish with two slices of orange butter on the top
