2 ribeyes, filets or strip
Salt and pepper
1/3 cup unsalted butter
2 tbsp avocado oil
4-5 garlic cloves, whole
3-4 sprig of thyme or rosemary

Peppercorn Sauce

1 shallot, finely diced
3 garlic cloves, minced
2 tsp black peppercorns, finely smashed
3 tbsp cognac or rum
1/4 cup beef broth
1/3 cup heavy cream
1 tsp Dijon mustard
Squeeze of lemon juice
Salt and pepper to taste

Frites

2-3 russet potatoes

STEAKS (You can substitute Flank and have a french Bavette Steak)

Heat a pan on high heat, sear the steak on ALL sides including the fat cap. Drop the heat and throw in butter, garlic and thyme. Once butter is foaming, baste the steak until it reaches desired temperature.

Peppercorn Sauce

In the same pan you cooked your steak, throw in butter and sauté shallots, garlic and smashed peppercorns until soften and fragrant. Deglaze with cognac or rum until most of it evaporates. Add beef stock and heavy cream along with Dijon mustard, Worcestershire sauce & a squeeze of lemon juice.

Frites

Cut into desired shape and throw into an ice bath for at least 20 min to remove starch. Dry thoroughly. Coat with oil and seasonings of your choice. Air fry at 400F for 15-20 min (Convection over 425F for 22-25 minutes). flipping halfway through.

The French add to the salt...
chopped parsley, a little garlic powder and parmesan cheese to the Frites .. YUMMY
