Slow Cooker Thanksgiving Turkey Breast Recipe

Ingredients: 1 (5lb) bone in turkey breast (fully thawed) 5 celery stalks - chopped up into inch sized pieces 2 onions, chopped into quarters About 12 baby carrots 1 Cup chicken broth 6 Tbs butter
Seasonings: 1-2 Tbs minced garlic (We love garlic in this house!) Salt 1-2 tsp paprika Pepper 1-2 tsp Italian seasoning 1/2 tsp ground parsley 1/2 tsp dried sage 1/2 tsp ground thyme
Optional Gravy Ingredients: 4 Tbs of butter 4 Tbs flour

Directions:1. Spray a 6qt slow cooker with cooking spray (Make sure the turkey breast you choose fits into your slow cooker. Choose a smaller breast if you have a smaller cooker) 2. Place the celery at the bottom as well as the onions and carrots. Pour the chicken broth over top. 3. With your hand, slide under the skin of the turkey breast to loosen it from the meat but don't remove it. 4. Soften the butter (so it is spreadable but not liquid) and mix it with all of the seasonings. Take about 2/3 of that mixture and slather it all over the turkey breast and under the skin all over the actual meat 5. Place the turkey BREAST SIDE DOWN onto the veggies in the slow cooker. Slather the remaining 1/3 of the butter/seasoning mixture all over the turkey on the part facing up. 6. Cover the slow cooker and cook on HIGH for 1 hour and then LOW for 5-7 hours until the turkey's internal temperature is 165 degrees.
*DON'T OPEN THE LID A BUNCH TO CHECK THE TEMP. That will dry the meat out. Wait at least 4.5 hours into the LOW cook time before checking the temp or use one of those fancy external thermometers to monitor it without lifting the lid.
7. Take turkey out and place it breast side up on a cutting board. Slice as desired and enjoy!
OPTIONAL GRAVY: 1. Strain everything from the slow cooker into a large bowl (press the veggies and other bits and pieces to get all that flavor into the bowl!) 2. In a large sauce pan, add 4 Tbs of butter and melt 3. While whisking, add 4 Tbs of flour to the pan, then gradually add the liquid from the slow cooker while continuing to whisk constantly 4. Taste and add salt/pepper as needed. Then enjoy warm with the turkey! |

Notes: When Ted and I first hosted Thanksgiving for Ted's family, we needed to make the main turkey pretty basic - salt, pepper and butter only - because his family "didn't like seasonings." So, for us to enjoy the tastiness of seasoning, I decided to make a turkey breast in the slow cooker with a bunch of seasonings to see how it turned out. The slow cooker turkey was a bigger hit than expected and now we make the main turkey fully seasoned :)
This is an easy, fool proof way to make moist and flavorful turkey for a small crowd at the holidays or just a weeknight any other time of year!
