6 c. chicken stock
1 c. lentils
1 lb. sausage (hot or sweet) - out of casings
1 medium potato, cubed
1 medium onion, diced
1 (15 oz.) can diced tomatoes
2-3 large portobella mushrooms, cubed
1/4 tsp.rosemary
1/2 tsp. paprika
Salt and pepper to taste

Directions:
Simmer lentils in chicken stock for 20-30 minutes. Brown sausage and remove from pan; saute mushrooms, onion and potatoes in sausage drippings. Add to lentils along with sausage, tomatoes, and spices. Simmer for another 10 minutes.

You can substitute any mushrooms for the portobella mushrooms.
