1 6-pound whole unpeeled beef tenderloin, trimmed
1 1/2 tbsp Kosher salt
2 tbsp vegetable oil
1 tbsp pepper
1 strip of thick bacon

Directions:
Tuck tail end of tenderloin and tie roast at 2 inch intervals with kitchen twine. Pat roast dry with paper towels and rub with salt. Cover loosely with plastic wrap and let sit at room temperature for 1 hour. Pat tenderloin dry with paper towels, rub with oil, and sprinkle with pepper.
For a gas grill, turn all burners to high, cover and heat grill until hot, about 15 minutes.
Clean and oil cooking grate. Place roast o hotter side of grill. Cook (covered) turning as needed, until well browned on all sides, 8 to 10 minutes. Leave primary gas burner on high and turn off other burners.
Slide beef to cooler side of grill. Cover and cook until center of meat registers 120-125º (for medium-rare), 15 to 30 minutes. Center of roast will remain a degree more rare than ends.)
Transfer roast to carving board, tent with aluminum foil, and let rest for 15-20 minutes. Remove twine, cut into 1/2 inch thick slices and serve.
