Two Fresh Tilapia filets
One cup Wild rice
One pint Heavy whipping cream
One shallot
Two green onions
Two table spoons of butter
One HOT Jalapeño
Handful of Melting Queso Cheese

Directions:
Directions:
Cook Tilapia to liking, I use Cajun seasoning.
Cook wild rice as directed on packet.

Sauce- add two table spoons of butter to skillet. Dice shallot and jalapeño and sauté until shallot is translucent NOT brown. Add heavy whipping cream. Stir and bring to simmer. Once shallot and jalapeño is tender add diced green onion and handful of Queso cheese. Stir until creamy. Add more cheese if want thicker but it will thicken with time. Plate sauce over rice then tilapia on top. Add more sauce if desired
