Danny's Panko Catfish Recipe

Catfish loins
Panko breadcrumbs
2 eggs
Cooking oil

Wash the catfish and start heating up the oil (not enough to submerge it though).

Cut the loins into your preferred sizes and season generously with whatever you prefer. I typically use salt, pepper, and a Cajun mix from HEB. Also season the breadcrumbs.

Beat eggs in bowl. Dunk the loins in eggwash and then into the panko crumbs. Repeat if desired making sure the entire loin is covered.

Place into the oil and cook about 6-8 minutes on both sides. However, time may differ depending on the thickness.

When the outside is a nice brown color and the fish is good and flaky, then you know it's ready!

P.S. Tara usually makes a hollandaise sauce to go with it.
