Thin sliced chicken breasts
1 c. flour
1 tbsp corn starch
1 tbsp baking powder
2 eggs
Seasonings of your choice
Cooking oil

Heat oil over medium heat in skillet. I usually use vegetable oil, but have used olive and avocado oils before and it still turns out great.

Mix flour corn starch and baking powder in bowl. The corn starch and baking powder make the breading airy and crispy when being fried.

Beat eggs in another bowl.

Trim the chicken and (here comes the Free Wheelin' part) mix in whatever seasonings you see fit to both the chicken and flour. I usually use salt, pepper and a spicy mix from Twisted Creek seasoning Tara and I found from a Farmer's Market in Montgomery, TX.

Dip the chicken in the eggwash, then dredge in the seasoned flour mixture. Wash and dredge a second time if you see fit. I usually don't because I am lazy and it makes a bit more of a mess.

Slowly lay the chicken into the oil and cook for around 2 to 4 minutes on each side, depending on the thickness of the chicken, until done.
