4 bone-in center-cut pork chops
1/4 tsp salt
pepper to taste
2 tsp olive oil, divided
1 c onion, diced
1 c dry red wine
1 tsp dried tarragon
2 c dried cherries

Directions:
Directions:
Trim visible fat from pork chops. Season lightly with salt and pepper. In a large, nonstick pan, warm 1 1/2 tsp oil over high heat. Brown chops on both sides (about 2 minutes). Remove from pan and set aside. Lower heat to medium and add remaining 1/2 tsp of oil and diced onion to the pan. Cook and stir until onion softens (about 5 minutes). Add red wine. Cook and stir for about 1 minute. Add tarragon and cherries. Cook and stir for another minute. Return pork chops and any juices to the pan. Simmer for 9 minutes to thicken sauce and fully cook the chops.
