2 tbsp olive oil
3 lb. meaty spareribs, cut into individual ribs
3 hot Italian sausages, cut into 1 in chunks
1 medium onion, chopped
1 medium carrot, chopped
1 medium celery rib, chopped
1 large garlic clove, finely chopped
1 28 oz. can tomato puree
Salt and freshly ground pepper

Directions:

In a large skillet, heat the oil over medium heat. Add the meats in batches and brown on all sides. Place the browned meats in the slow cooker. Add the chopped vegetables to the pan and cook, stirring, until tender and golden. Stir in the tomato puree and a pinch of salt and pepper, scraping the bottom of the pan. Bring the sauce to a simmer. Pour it into the cooker.

Cover and cook on low for 6-8 hours, or until the meat is falling away from the bones. Serve hot.

"On a cold, rainy December day in Rome, we trudged past the steamy windows of an old trattoria. We could barely see the interior, but it seemed warm and cozy, just what we were craving. Inside, we were quickly shown to a table, where the waitress recited the simple menu. I chose spareribs prepared in a rich tomato sauce with mildly spiced sausage. It was served over soft, creamy yellow polenta. When I make my version at home, I sometimes toss the meat and sauce with chunky pasta or serve it over tender cooked cannellini beans."
