1/2 c. butter
10 russet potatoes
1 small onion
2-3 tbsp. parsley
1 garlic clove
Salt and pepper

Directions:
Directions:
Preheat oven to 375ºF. Dice potatoes into large pieces. Dice onion finely. Melt butter in skillet and cook onions until softened. Add potatoes and toss in butter. Pour onto cookie sheet, lined with foil. Bake for 45 minutes, stirring halfway, or until potatoes are fork tender and golden. Season with salt and pepper and sprinkle with chopped parsley.
