1 pkg fresh pork skin
Italian bread crumbs
salt
pepper
dried basil
parsley
grated cheese

Directions:
Directions:
Wash and pat dry pork skin.

Sprinkle with bread crumbs, salt, pepper, parsley, basil, and grated cheese. Roll up like a jelly roll and tie together with string or dental floss.

Place rolled pork skin into a pot of tomato sauce and simmer for 2 hours or until pork skin is cooked through.

Remove pork skin from sauce and let cool on cutting board. Cut into slices and return to tomato sauce.

Serve with sauce over pasta of your choice.

This recipe was never written down -- I learned it from watching Sophie, who learned it from watching her mother-in-law, Josephine Fuelo. Josephine came from a large Italian family. There were many mouths to feed, and meat was expensive. Pork skin brasciole is the iconic peasant dish --
traditional, cheap and delicious. While it is high in fat and not at all healthy by today's standards, it was a favorite addition to our Sunday dinners. If eating pork brasciole is not your cup of tea, the brasciole also adds amazing flavor to the sauce.
