2 T. Flour
2 T. cooking oil
1 onion chopped
2 8 oz cans tomato sauce
2 cans water
6 eggs

Directions:
Directions:
Heat cooking oil in heavy sauce pan. Add flour and stir until color of peanut butter. Add onions and stir for about five minutes on low heat. Add tomato sauce and cook until moisture from tomato sauce is reduced. Add two cans water. Bring to a boil and cook on low heat for about 15 minutes. Break eggs into sauce one at a time apart from each other and season with salt and pepper. Cook until eggs are set and flip each one over gently. Serve on rice.
