1 medium Onion
2 tablespoons Butter
3 Boneless, Skinless Chicken Breasts (or Boneless Chicken Thighs)
2 (14 ounce) cans Chicken Stock
1 cup Sour Cream
Hungarian Paprika
Salt and Pepper to taste
Flour for thickening
1 pound Pasta Shells or Bowties
1 (10 ounce) bag Peas and Carrots, frozen

Directions:
Directions:
Saute onion in butter in a soup pot. Add chicken, sprinkling GENEROUSLY with salt and pepper, and covering the chicken with paprika. Cover and cook on low for 30 minutes.
Add chicken stock, and continue cooking until chicken is tender (approximately 30 more minutes).
Remove chicken and cube. Set aside.
Add sour cream to the gravy, whisking to combine. Then add thickener (2 tablespoons flour with 2 tablespoons water whisked together) and whisk until thickened.
Return chicken to the pot and heat through. Adjust seasoning with salt and pepper.
Serve over pasta with peas and carrots.
