4 Boneless, Skinless Chicken Breast halves
1½ cups Ritz Crackers, crushed
1½ cups Parmesan Cheese, grated
1 tablespoon Parsley
1 stick Butter, melted
¼ cup Lemon Juice
Salt and Pepper to taste

Directions:
Directions:
Spray baking dish with cooking spray. Place crackers in a gallon-size Ziplock bag, seal, and crush. Add parmesan cheese and parsley.
Melt butter in the microwave. Dip each chicken breast in butter then in cracker/cheese mixture to coat. Place chicken in baking dish.
When all chicken has been coated, empty remaining cracker/cheese mixture on top of chicken and spread evenly. Pour remaining butter over the top of the chicken. Salt and pepper chicken, and then drizzle with lemon juice.
Bake (uncovered) at 350˚ for 50 minutes.
