Cara Cara Salsa


Ingredients:

½ pint Cherry Tomatoes, diced and seeded
2 Cara Cara (or other) Oranges, peeled and diced
¼ Red Onion, diced
1 Jalapeno, diced
½ cup Cilantro, chopped
2 tablespoons Lemon Juice

Combine all ingredients and set aside.

¼ cup Cara Cara Juice
Cara Cara Zest
1 tablespoon Olive Oil
Salt and Pepper to taste
4 (3 ounce) Salmon portions

Directions:
Directions:
Combine juice, zest, oil, and seasonings and use to marinate salmon for 10 minutes.
Place salmon on greased baking sheet, add reserved marinade, and bake salmon at 450º for 12-15 minutes.
Top salmon with salsa to serve.
