1 Tbsp olive oil
3 lbs chuck steak
1 onion, sliced
2 garlic cloves, peeled and sliced
Cherry peppers (optional)
2 Tbsp tomato paste
1 can (28-oz) peeled plum tomatoes, chopped or roughly squeezed
1 bay leaf
1 tsp oregano
1 tsp salt
1 tsp dried basil
Pepper to taste

Directions:
Directions:
1. Heat oil in a large skillet over high heat. Add steak and brown on all sides.
2. Remove steak from the pan and reduce heat to medium.
3. Add the onion and garlic and cook for about 1 minute.
4. Add the hot cherry peppers if using and then the tomato paste.
5. Add the tomatoes and spices to the pan and bring to a boil.
6. Add steak to the pan, cover and lower to a simmer. Cook for 1 ½ hours until tender.
