2 lbs ground lean beef*
2 large eggs
1 cup freshly grated Pecorino Romano cheese
1 ½ Tbsp chopped Italian parsely
½ small clove minced garlic
2 cups seasoned Italian bread crumbs**
2 cups lukewarm water or low-fat milk**
Salt and pepper

Directions:
Directions:
1. Mix all above ingredients (except bread crumbs and water) together in a large bowl.
2. When well mixed, blend the bread crumbs into the meat mixture.
3. Slowly add the water (or milk) 1 cup at a time until all is blended and the mixture is moist.
4. Shape into balls.
5. Two options: Fry the meatballs in olive oil or put them on a cookie sheet and bake at 400º until crisp, which should take approximately 45 minutes.

*In place of using all ground beef, you can use ground veal and/or ground pork.

**In place of using bread crumbs, you can use two day old Italian bread. Soak the bread in warm water. When it is soft, remove the outer crust and mix the soft bread in the meat mixture. Of course, if you choose this option, eliminate the bread crumbs and 2 cups of water. Bread mixture creates a softer meatball.
