"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

Ingredients:
Ingredients:
4 lbs brisket, first cut
2 large onions, chopped
2 Tbsp olive oil
Salt and pepper
1 packet beef broth
1 cup boiling water
4 oz ketchup
1 (12-oz) bottle tomato chili sauce
4 oz brown sugar
1 (12-oz) can beer

Directions:
Directions:
1. Rub brisket with salt and pepper.
2. Brown brisket in hot skillet with 2 to 3 tbsp olive oil.
3. Remove brisket and brown chopped onions in skillet.
4. Place brisket in large pot and add all other ingredients. Make sure sauce covers half of brisket. You may want to save some extra sauce for reserve as liquid will reduce during cooking.
5. Cover and cook over low heat for at least 3 to 4 hours, until meat is very tender.
6. Cool brisket and slice, going against the grain.
7. Place sliced brisket back in pot with sauce.
8. Reheat in sauce before serving. Tastes best if made one day before serving.

Alternative: Make this recipe and cook in 350º oven in roasting pan, covering with foil, for 3 to 4 hours.
