• Half pound alligator meat, well-trimmed
• 3 pieces of bacon
• 2 teaspoons of cumin
• 2 tablespoons vinegar base South Carolina barbecue sauce
• 8 small sweet peppers
• 8 medium sized mushrooms, hollowed
• Gouda cheese, a few slices

Directions:

• Chop alligator and bacon together
• Mix with cumin and vinegar sauce
• Hollow mushrooms and peppers for stuffing
• Put a small piece of cheese in the bottom of the peppers and mushrooms
• Stuff peppers and mushrooms with alligator mixture, approximately 1 tablespoon
• Smoke for 20 minutes at 200° with hickory smoke
• Move to grill, grill hot for 10 minutes
• Top with cheese
• When cheese is melted, serve and enjoy!

If you have trouble finding an ingredient; you can use Edam or Jack cheese instead of Gouda…LOL!
