• 1 4.5 oz. jar dried beef
• 4 T unsalted butter
• 6 T Flour
• 3-4 cups milk
• 1 t nutmeg
• Fresh ground black pepper

• Toast

• *Dried beef is very salty. To reduce the salt, rinse the beef under running cold water for thirty seconds. You don’t want to overdo this, or your beef has no flavor. Dry the beef with a paper towel (pun intended;-)
• Cut into bite size pieces
• In a large skillet, melt the butter over medium heat
• Add flour 1 T at a time, sprinkling across the pan and whisking between additions to remove all lumps
• Add the beef and stir well (don’t wait till the end or your gravy won’t be flavorful)
• Add milk Ό cup at a time up to 2 CUPS, stirring to incorporate and insuring no lumps. It will bubble between additions
• Add nutmeg and pepper
• Reduce heat to warm and simmer, stirring occasionally
• Add the remaining milk Ό cup at a time while stirring to get the gravy consistency you want. One cup is about right

• Serve over toast

*Try rinsing one piece of beef and taste it. Everyone has a different opinion about how much salt you like.
