Ingredients:  
• 1 tub Chicken Livers
• 1 package of Maple Bacon
• 1 Can sliced Water Chestnuts
• 1 Cup Pineapple Juice
• Coarse Ground Garlic with Parsley
• Coarse Ground Pepper

Directions:
Directions:
• Cut package of bacon strips in half making short strips
• Place 1 water chestnut slice on one end of the bacon strip
• Lay a chicken liver on top and roll up
• Secure with a tooth pick
• Do the entire tub of liver and package of bacon in this way, and place on a broiler pan with holes
• Pour pineapple juice over all. It will drain into the bottom pan and keep them moist while in the oven
• Sprinkle Garlic, Parsley, and Pepper on generously
• Place in oven on Broil
• Once they are brown, turn over with tongs and sprinkle Garlic, Parsley, and Pepper on other side.
• Once this side is brown, remove and serve hot

Even those of us who don’t like liver love this recipe.

Because of this recipe, I started wrapping other things in bacon. I use regular or hickory smoked bacon. Some favorites are:
• Oysters, with or without water chestnuts
• Scallops
• Dates, stuffed with cheese or not
• Pineapple chunks

Be creative, everything is good wrapped in bacon and broiled!
