• 4-5 Bananas
• Ύ of an 11 oz. box of Vanilla Wafers (use the rest of the box if needed)
• 4 Eggs
• 1 cup Sugar
• 3 T Flour
• ½ t Salt
• 2 cups Milk
• 2 T Butter
• 1 T Vanilla

• Whipped cream or meringue

Meringue ingredients
• 4 egg whites
• Pinch of salt
• Ό t cream of tartar
• ½ t vanilla
• ½ cup sugar

• Separate the eggs. Set the whites aside to come to room temperature for meringue.
• Beat the yolks
• Set the whites aside

• In a medium sauce pan combine sugar, flour, salt, and milk
• Bring to a boil for one minute stirring constantly
• Put 1/3 of the hot mixture in with the yolks and stir well
• Put the yolk mixture in the sauce pan and return to a boil for one minute
• Remove from heat
• Add the butter and vanilla, stir well

• Line a casserole dish with vanilla wafers, including the sides (You can use any configuration of dish as long as it will hold @2.5-3 quarts. I had an old 3 quart. Corning ware casserole dish that was perfect)
• Slice the bananas over the cookies (I use the bananas to hold up the cookies on the sides)
• Pour the hot pudding over the bananas evenly
• Set aside

Topping Options

Whipped cream (my recipe is in this section or Cool Whip works too)
• Allow the pudding to cool to room temperature or if you like it cold, refrigerate it.
• Cover with whipped cream and serve
• You can shave some chocolate over the top for a nice look

Meringue
• Beat the egg whites with salt until frothy
• Add Ό t cream of tartar and Ό t vanilla. Beat until you have soft peaks
• Add ½ cup sugar and beat on high until stiff peaks form
• Spread the meringue on the pudding, pulling up nice peaks (no need to cool first)
• Bake at 425Ί until light brown
• Remove and serve warm, or allow to come to room temperature

It is uncertain if this was Mama’s recipe or Aunt Beth’s. Im going with Mama since I remember eating this in her kitchen in Texas when I was a little girl. There was always a HUGE meal at mid-day with all of the farm hands present. Loved those meals!!

Sandra likes to add pineapple chunks along with the bananas.

Some like to mix the cookies in with the pudding, instead of having the bottom layer.

If you use whipped cream, save the egg whites for an omelet! Whisk them with a couple of tablespoons of milk, salt, and pepper. Asparagus, mushrooms, or artichokes and a nice white cheese go well for the filling. Waste Not!
