• 2 cups Sugar
• 2 cups Flour

• 1 Stick Oleo (butter)
• ½ cup Wesson Oil
• 4 T cocoa
• 1 cup Water

• ½ cup Buttermilk
• 1 t baking soda
• ½ t cinnamon
• 1 t vanilla
• 2 eggs, slightly whisked

Icing
o 1 stick Oleo (butter)
o 3 T cocoa
o 6 T Milk
o 1 box powdered sugar (16 oz.)
o 1 t vanilla
o 1 cup chopped nuts

Directions:
Directions:
• Mix the sugar and flour together in a large bowl, set aside
• Put the butter, oil, cocoa, and water in a medium saucepan
• Bring to a boil stirring constantly to mix well and prevent scorching
• Add to the flour and sugar in the mixing bowl
• Mix well (whisk or a mixer on medium speed)
• Add buttermilk, baking soda, cinnamon, vanilla, and eggs
• Mix well
• Pour into a greased “cake pan” (an 8x8” square baking dish works)
• Bake at 350º for 25 minutes
• Note that this is pudding cake, so it will be runny in the middle. Just trust Nanny and take it out at 25
minutes.

While the cake is baking, make the icing
o Melt the butter in a saucepan
o Add the cocoa and milk
o Bring to a boil stirring constantly
o Remove from heat
o Add the powdered sugar, vanilla, and nuts
o Stir well

• Ice the cake while hot. You basically pour the icing over the cake until it just about overflows. The cake
will cave in a little, but that is ok.

Nanny always had this sitting on the counter by the kitchen door. I think everyone grabbed a spoon and took a bite on the way by. I did! Nanny’s cake was cool before anyone heard of lava cake!
