• 4-6 cups sliced mushrooms (Baby Bellas and Cremini are good)
• ¼ cup butter
• 4-6 slices of toast (depends on the thickness)
• 4 T Dijon Mustard
• 10 Eggs slightly beaten
• 3 cups milk
• Salt and Pepper to taste
• 2 ½ cups of brie, with the rind trimmed off
• 3 T Fresh Tarragon, finely chopped (dry works too. Cut the amount in half)

• 1 cup Diced ham (Optional per Cathy)*

• Sauté the mushrooms in the butter until soft
• Butter a 13x9 casserole dish
• Spread the mushrooms in the bottom of the dish
• Spread mustard on the toast and then cut into cubes
• Cover the mushrooms with the toast cubes in a single layer
• Put the brie over the toast cubes
• *If you are using ham, put it on now
• Whisk the eggs with the milk, salt, pepper, and tarragon
• Pour evenly over the contents of the dish
• Cover and refrigerate 6 hours or overnight

• Bake at 350º for 40-50 minutes. A knife in the center will come out clean

This is one of my dear friend Bunny’s recipes. She was a great cook!

The flavor combination is a nice change from a typical strata.

When I do this, I put the casserole in while the oven is preheating. It took exactly 50 minutes that way.
