Ingredients: 1 can Evaporated Milk 3 beaten eggs ½ lb. grated cheddar cheese ½ red bell pepper diced small ½ yellow onion diced small ½ stick butter 1 T Worcestershire Sauce 3-4 finely chopped bird peppers (cayenne peppers are probably as close as you will get in the US. Any pepper will work, just choose your heat preference for the type and amount) Salt and pepper to taste ½ lb. macaroni noodles

Directions: Preheat the oven to 350Ί Sautι the onion and bell pepper in the butter until soft. Set aside. Boil the noodles, strain, do not rinse, and set aside In a large bowl whisk together the eggs, evaporated milk, and Worcestershire Add bird peppers and ⅔ of the cheese. Stir well. Add the sautι mix and noodles. Stir well Put the mixture into a greased 8x8 (ish) casserole dish Top with the rest of the grated cheese. Add more if needed to cover the casserole Bake for 1 hour |

Notes: The Bahamians are big fans of mac and cheese. It is often the side that goes with fries or peas and rice. No wonder Ive gained 10 lbs.! Their style is not the creamy type, but is so good that I had to learn to make it. Dont shy away from the peppers. It is just enough to add interest, but doesnt overwhelm the dish.
