• 4 slices toast cut in cubes
• ½ lb. bacon cooked and drained
• ½ lb. sausage (I like Jimmy Dean Hot) browned and drained
• ½ lb. grated cheese (you can use cheddar, Colby, jack, pepper jack, etc.)
• 10 eggs
• 2 cups of half and half*

Optional ingredients and variations:
o Ham
o Sliced mushrooms
o Diced bell peppers
o Diced onions
o Chopped tomatoes
o Jalapenos chopped
o Whatever you like mixed with eggs will work

• Rub a 9x13 casserole with butter
• Spread the toast cubes in the bottom
• Crumble the bacon and sausage over the bread
• Sprinkle any other optional ingredients over the bacon and sausage
• Sprinkle the cheese next
• Whisk together the eggs and half and half until well mixed
• Pour over the other ingredients

• Cover the casserole tightly with plastic wrap and refrigerate overnight

• Remove plastic wrap and place the Strata in the oven. Turn the heat to 375. This allows the Strata to come to temperature as the oven heats.
• Cook for 30-45 minutes. This will vary depending on the optional ingredients you include and your oven. 30 minutes generally works for me.
• A knife inserted in the center will come out clean when it is ready


• NOTE, you can loosely tent some foil over the Strata after the first 20 minutes to keep it from getting too brown

• Allow to sit 10 minutes and then serve while still hot.

Just about everyone has a Strata/breakfast casserole recipe. This is my basic recipe, but I often change the ingredients to work with what I have on hand. Years ago when I started making Strata, I used twice the bread. I found it too bready, so cut back to this ratio.

*If you don’t have half and half, you can make your own. Use 1 cup of whole milk and 1 cup of whipping cream. OR use 1.5 cups of whole milk and ½ cup heavy whipping cream.
