• 1 cup flour
• 1 T Brown sugar
• 2 t Baking powder
• Ό t salt

• 1 egg beaten
• 1 cup milk
• 2 T vegetable oil
• Ύ cup mashed bananas (don’t puree them, leave some texture)
• ½ t vanilla

• ½ cup Pancake syrup (we like real maple syrup)
• Ό cup Peanut Butter (we like Jiff Extra Crunchy, but creamy is good too))

• Butter

• Sliced bananas for topping, if you like

• Powdered Sugar

Directions:

• Mix the first four ingredients together and set aside
• Whisk together the next 5 ingredients in a mixing bowl
• Sift the dry mix into the egg mixture
• Whisk until mixed

• Put the syrup and peanut butter in a small sauce pan on low heat
• Stir occasionally

• Heat a non-stick griddle to 325Ί, or a non-stick skillet over medium heat
• To test if the heat is right, drop a bead of batter and see if it browns quickly
• Put ⅓ cup of batter on the griddle/pan for each pancake
• When the batter bubbles all over, the bottom should be a light brown
• Turn the pancakes and keep an eye on bottom until golden brown
• Remove from heat and serve with butter and the peanut butter syrup

• These are also good with butter and powdered sugar

• Sliced bananas are good too

In Brazil, on the mission base, we had a lot of banana trees and a lot of boys in the House of Hope. I made banana pancakes for them one morning. They loved the pancakes, but peanut butter is not often used there, so the syrup was met with mixed reviews.

If you are a peanut butter and banana sandwich fan, you will like this recipe.
