• 1 T Olive Oil
• 2 cloves garlic *smashed (not chopped or minced)
• 8 oz. spinach leaves
• Salt and ground pepper to taste

• Put olive oil in a large sauté pan over medium heat
• Add the garlic. Sauté for 1 minute, stirring.
• Add the spinach (yes, all of it)
• Grind black pepper and salt over the top
• Gently turn the spinach with a wooden spoon as you sauté
• It only takes a minute or two to be done. You want it just barely wilted.
• Remove from heat.
• Remove the garlic and serve right away

This only makes 2-3 servings. Spinach is deceptive. Since it contains so much moisture, when you cook it what seems like a lot is really very little.

*To smash the garlic, peel it and place on a cutting board. Take your chef’s knife and put the flat side on the garlic bulb, with the sharp side away from you. Smack the knife with the heel of your palm. This allows you to release the garlic flavor without inundating your recipe with garlic. Spinach is delicate, so if you use minced garlic, garlic is all you will taste.
