Nassau Grits Recipe

Ingredients:  
• ½ lb. Ground sausage
• ½ lb. Bacon
• 1 cup chopped yellow onion
• ½ cup chopped green bell pepper
• 1 T finely chopped garlic

• 2 cups chopped fresh tomatoes, remove the seeds

• 4 cups water
• 1 cup stone ground grits (yellow or white)
• 1 ½ t Worcestershire Sauce
• ½ t hot sauce (I like Marie Sharp)

• 1 t fresh ground pepper

• Brown and drain the sausage. Set aside

• In a 4 quart saucepan, cook the bacon until crispy. Remove and set aside. Reserve 2 T of the grease. Discard the rest.

• Heat the sauce pan with bacon grease to medium and sautι the onions, bell peppers, and garlic until tender
• Add the tomatoes, raise the heat to medium high and sautι for one minute

• Add the water, Worcestershire, hot sauce, and pepper. Bring to a boil.
• Gradually add the grits while stirring. Cover and reduce heat to a simmer.
• Cook for 12-15 minutes, stirring occasionally until thick.
• Add the bacon and sausage.
• Cover and cook three more minutes.
• Add salt if needed.
