• ⅔ cup sugar
• ¼ cup water
• 4 large egg yolks
• ½ t vanilla
• 9 oz. mascarpone
• 5 T dark rum
• 1 cup heavy cream
• 12-16 Italian ladyfingers
• ⅓ cup espresso coffee
• 3 oz. dark chocolate, refrigerated until ready to use

• Put sugar and water in a small sauce pan and bring to a boil
• Stir over medium heat, brushing down the sides of the pan until the mixture reaches soft-ball stage (when you dip a spoon the sugar water the liquid will form a ball before dripping off) This is your basic simple syrup
• Remove from heat

• In a mixing bowl, beat the egg yolks and then add the syrup in a stream.
• Beat until cool
• Beat in the vanilla

• In a separate bowl, whisk the mascarpone and rum until smooth
• Add to the egg mixture and mix on low

• In a separate bowl (yes, lots of dishes) beat the heavy cream until it hold soft peaks
• Fold the cream into the mixture

• Brew ⅓ cup espresso and set aside

• Put 3 ladyfingers in the bottom of 4 parfait glasses*
• Drizzle a little espresso over the ladyfingers
• Spoon the mixture into each glass and smooth the top
• Cover with plastic wrap and chill at least 3 hours or even overnight

• To serve, grate or shave chocolate on top of each parfait

You can also make this in a trifle dish, or any serving dish that will hold about 6 cups.

I got this recipe from a little Italian cookbook I found in the early 90’s rummaging around in a book store. This is still my favorite Tiramisu.
