1 medium eggplant
1 qt. Italian-style marinara sauce
1 c. raisins
3/4 c. Parmesan cheese, grated
1 tsp. garlic powder (fresh minced garlic if preferred)
1/2 c. olive oil

Directions:
Directions:
Wash, but do not peel the eggplant; cube into approximately 3/4-inch pieces. Heat oil in a medium size saucepan; add eggplant and toss lightly. Add all other ingredients; mix and simmer covered for at least 45 minutes. Stir occasionally to prevent sticking.

This dish may be served as a vegetable or spooned over your favorite pasta. For entertaining, you may place in a casserole, top with mozzarella or Swiss cheese and reheat in a 325 F. oven.
