Lobster Smashed Potatoes Recipe

Ingredients: • 4 Idaho potatoes, peeled and cut into 2 inch cubes • 4 T butter • 3 cloves garlic, peeled and smashed, not minced • ½ cup sour cream • Milk (up to ¼ cup) • 1 ½ cups raw lobster meat diced

Directions:• Place potatoes in boiling, salted water and cook until tender • Drain and return to pan (do not rinse) • Sauté 2 T of the butter with garlic on medium low heat 5 minutes. • Remove from heat and discard the garlic • Add the garlic butter to the potatoes • Add sour cream and a little of the milk • Smash with a hand masher. You don’t want creamy potatoes for this. • Add more milk to get to the right consistency • Sauté’ the lobster in the remaining 2 T of butter, turning occasionally. This will take 5-7 minutes until lobster is opaque • Add the lobster and its butter to the potatoes. • Stir to mix. • Add fresh ground pepper and salt to taste.
• Serve with a steak for a twist on “surf and turf" |

Notes: In the Bahamas during lobster season, spiny lobster is plentiful. It was fun coming up with different recipes, and a bit decadent… This is best with raw lobster meat, but if you have leftover cooked lobster (yeah right) or if you get Maine lobster and need to boil it to kill it, this can still work. Don’t boil it very long so that you can sauté "raw" meat in butter a bit. It adds richness. I do the garlic in butter separately so there is only a hint of garlic and not full-on garlic mashed potatoes. Those are awesome too, but this is about the lobster.
