• Ύ c shortening
• ½ c brown sugar
• ½ c sugar

• 1 egg
• 1 c mashed bananas
• 1 Ύ c quick oatmeal
• ½ c chopped nuts
• ½ t vanilla

• 1 ½ cup all-purpose flour
• ½ t baking soda
• 1 t salt
• 1 t nutmeg
• Ύ t cinnamon

• Cream shortening and both sugars together
• Add egg, bananas, nuts, and vanilla
• Mix well
• Mix the 5 dry ingredients together and then sift into the banana mixture
• Mix well on low

• Preheat oven to 350Ί

• Drop @ 2 T of batter for each cookie on an ungreased cookie sheet. Place them 1” apart.
• Cook 15 minutes until the bottoms are light brown
• Remove from oven and allow to sit 5 minutes before removing from pan to cool

These are like little banana breads. They are soft and don’t spread much during cooking. If you want them a little flatter, press the dough when you place it on the pan.

I have added cinnamon chips which is pretty good, but not necessary.

We have a habit of buying too many bananas and letting them get soft. I keep a baggie of whole bananas in the freezer. When I'm ready to use them, I just run cold water over them and can press the banana out of the peel easily. Waste not!
