Ingredients: Ύ c shortening ½ c brown sugar ½ c sugar
1 egg 1 c mashed bananas 1 Ύ c quick oatmeal ½ c chopped nuts ½ t vanilla
1 ½ cup all-purpose flour ½ t baking soda 1 t salt 1 t nutmeg Ύ t cinnamon

Directions: Cream shortening and both sugars together Add egg, bananas, nuts, and vanilla Mix well Mix the 5 dry ingredients together and then sift into the banana mixture Mix well on low
Preheat oven to 350Ί
Drop @ 2 T of batter for each cookie on an ungreased cookie sheet. Place them 1 apart. Cook 15 minutes until the bottoms are light brown Remove from oven and allow to sit 5 minutes before removing from pan to cool |

Notes: These are like little banana breads. They are soft and dont spread much during cooking. If you want them a little flatter, press the dough when you place it on the pan.
I have added cinnamon chips which is pretty good, but not necessary.
We have a habit of buying too many bananas and letting them get soft. I keep a baggie of whole bananas in the freezer. When I'm ready to use them, I just run cold water over them and can press the banana out of the peel easily. Waste not!
