• ¾ cup sugar
• ⅓ cup cocoa
• *2 heaping T flour
• Dash of salt
• 2 cups milk
• ⅓ cup sugar
• *2 egg yolks
• ½ stick butter (1/4 cup)
• 1 t vanilla (please use good vanilla ;-)
• 1 pie shell

Bake one pie crust. Allow it to cool.

• Sift together ¾ cup sugar, cocoa, and flour. Set aside.
• Mix remaining ⅓ sugar and egg yolks well on low speed, or whisk. Set aside.
• Heat milk and salt in a large sauce pan on medium. Be careful not to scald it!
• Add the flour mixture. Stir until it thickens.
• Add the egg mixture. Stir until thickened again.
• Remove from heat.
• Add the butter and vanilla. Mix until butter is melted.
• Pour into shell. Let sit until it is firm. (I put it in the fridge, but you don’t have to.)

Top with meringue and bake. See my meringue recipe.

*After much soul searching, I had to figure out why Nanny’s pie is always a bit runny. I am not disrespecting the original!!! But, if you add another egg yolk and make the flour 1/3 cup (“heaping” is subjective) your pie will set better. Smith disagrees with me about the runniness... You decide.

Maybe my copy of her recipe is wrong...?
