2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/2 stick butter, diced finely
2 eggs, beaten
1/3 c. jam

1 egg beaten with 2 T. milk for egg wash

Directions:
Directions:
Mix flour, baking powder and salt; cut in butter; mix in beaten egg and jam and blend just until all ingredients stick together. Add a little milk if necessary. The dough should be a bit sticky.

Dump the dough onto a well-floured surface; flour your hands and either use a rolling pin or pat flat with your hands until the dough is 3/4-inch thick. You should see lumps of butter in the dough. Cut into squares and then cut again into triangles. Place on a baking sheet lined with parchment paper. Brush the tops with egg wash and sprinkle with sugar. Bake at 400 F. for 12-14 minutes.
