3 T. unflavored gelatin
1 c. honey
1 tsp. vanilla extract
1/4 tsp. sea salt

Grease an 8x8" pan or line with parchment paper both directions (leave some length to use as handles when removing your finished marshmallows).

In a mixing bowl, add the gelatin with 1/2 c. cool water. While the gelatin in softening, pour the remaining 1/2 c. water into a saucepan. Add the honey, vanilla and salt. Over medium heat, slowly bring the water/honey mixture to a boil. If using a kitchen thermometer, allow to reach at least 240º (soft ball stage). If not, just keep boiling, stirring constantly for 8 minutes. Immediately remove saucepan from heat.

Slowly pour the honey mixture into a bowl, combining it with the softened gelatin. Turn the mixer to high and beat mixture until it becomes thick like marshmallow creme. It should form gentle peaks (after about 10 minutes). When mixture is whipped, pour into the lined/greased dish and smooth evenly. When set, flip onto a cutting board and remove parchment paper (if used). Cut to desired size pieces. Store in airtight container.

*Coating options: crushed nuts, finely shredded coconut, cocoa powder, etc.
