1 T. unflavored gelatin
1/2 c. water
2 oz. dark chocolate (70% or higher)
1 can full-fat coconut milk
1 tsp. vanilla extract
10-12 drops liquid Stevia (or other sweetener of choice)

Directions:
Directions:
Melt chocolate in a double boiler with coconut milk and Stevia. Stir until melted and mixed thoroughly. Remove from heat and mix in vanilla.

In a separate bowl, stir gelatin into water. Once dissolved, add gelatin to chocolate mixture and stir well. Place mousse in refrigerator and chill for 1-2 hours until set.
