20 dried dates, pits removed
1/2 c. old-fashioned rolled oats
1/4 c. finely shredded unsweetened coconut
1 c. almond butter
1 T. coconut oil
1/4 c. raw pecans (or other nuts)
1 T. honey
1 tsp. vanilla extract

Optional additions:
1/4 c. dried cranberries
1/4 c. dark chocolate chips

Directions:
Directions:
Place all ingredients (except optional additions) in a food processor and blend until well combined. Stir in optional additions. Add more coconut oil (1 T. at a time) if you feel it is too dry. Roll into bite-sized balls (about 1" in size) and place in a container or on a baking sheet in a single layer. Refrigerate (or freeze) until set, about 30 minutes. Store in a covered container in the refrigerator or freezer.
