1 tbsp. Kosher salt
2 tsps. ground cumin
1 tsp. chili powder
1 tsp. dried thyme
½ tsp. cayenne pepper
3 tbsp. brown sugar
1 tsp. ground coriander
2 tsp. dried oregano
1 tsp. dry mustard
3 lbs. flank steak

Combine all the rub ingredients in a bowl and mix well. Coat the meat with the rub and let it cure for 4 - 6 hours. Lightly rinse the cured steak under running water to remove excess rub. Can also use this rub on chicken or pork.
