6 cups beer
2 1/2 cups dark brown sugar
1 1/2 cups apple cider vinegar
1 1/2 tbsp. chili powder
1 1/2 tbsp. ground cumin
1 tbsp. dry mustard
2 tsp. salt
2 tsp. dried crushed red pepper
2 bay leaves
8 lbs. baby back pork ribs, cut into 4-rib sections.

Combine all except the ribs and bring to a boil in a very large pot. Reduce heat and simmer 1 minute to blend flavors. Add half the ribs to sauce. Cover pot and simmer until ribs are tender, turning frequently, about 25 minutes. Transfer ribs to baking sheet. Repeat with remaining ribs. Boil barbecue sauce until reduced to 3 cups, about 40 minutes. Discard bay leaves. Heat barbecue (medium heat). Brush ribs with some of the sauce; sprinkle with salt. Grill ribs until heated through, brown and well glazed, brushing occasionally with sauce, about 6 minutes per side. Transfer ribs to platter. Serve with remaining sauce.
