2 tsp. tamarind pulp
1 medium onion
1 medium piece fresh ginger
1 tbsp. coriander
28 – 30 raw cashews
1 lemon grass stalk
¼ tsp. white pepper
1 cup boiling water
2 cloves garlic
2 tbsp. vegetable oil
1-1/2 tsp. cumin
3/4 cup canned coconut milk
1 tsp. salt
chili powder

Directions:

Fry chicken breast pieces. Chop onion, garlic and ginger and fry in oil for 3 minutes. Add spices and finely ground nuts. Cook briefly over medium heat. Add coconut milk, lemon grass and simmer 1 - 2 minutes. Add chicken pieces and simmer 5 - 6 minutes. Transfer to serving dish and sprinkle with chili powder. Serve with rice.
