4 chicken breast halves, skinned and boned
3 eggs
1 tbsp. dry mustard
1 1/4 cup dry bread crumbs
1 tsp. oregano
¼ cup grated Parmesan cheese
4 tbsp. vegetable oil
4 tbsp. butter or margarine
3/4 cup mozzarella cheese

Pound chicken breasts until very thin. Beat together eggs and mustard. Combine bread crumbs, parmesan cheese and oregano. Dip chicken into egg mixture, then crumbs. In half of the oil and butter brown two chicken pieces on both sides. Repeat with remaining oil, butter and chicken. Place browned chicken in single layer in greased casserole dish. Spoon tomato sauce over chicken and sprinkle with mozzarella cheese. Bake at 350° for 20 minutes.
