3 tbsp. olive oil
2 yellow peppers, seeded and sliced
1 sprig fresh thyme
1 cup vegetable or fish stock
20 fresh large sea scallops
1 small onion, diced
1 clove garlic, smashed
cup whipping cream
1 tsp. white sugar
salt and pepper

Heat 2 tbsp. of oil in saucepan, add onion and cook until soft. Add peppers, garlic and thyme, cook for 5 min. Add the stock and bring to a boil, simmer for 20 minutes until peppers are very soft.. Remove thyme and puree the pepper mixture. Return to pan and add the cream and sugar. Bring to boil and simmer 5 minutes. Season the scallops. Add the remaining oil to a very hot frying pan and sear the scallops 2 minutes, turn and cook for I more minute until just opaque in centre. Divide the sauce between 4 warmed plates and top with the scallops.
