3 cloves garlic, minced
½ medium onion, minced
2 medium jalapeno peppers, chopped fine
2 tbsp. butter
2 tsp. chopped fresh rosemary
1 cup dry white wine
1 lb. mussels, scrubbed & debearded
6 oz. angel hair pasta
1 cup grated Monterey Jack or Swiss
½ cup heavy cream
cheese tossed with 1 tbsp. flour
Parmesan cheese
Fresh oregano, chopped

Directions:
In large pot, combine the garlic, onion, butter, jalapeno peppers, wine and rosemary. Cook over medium heat until the garlic and onions are soft. Start a pot of water boiling to cook the noodles. Cook per package instructions. Add the mussels to the pot with the onion, increase the heat o high and cook until the mussels just start to open - 5 minutes. Add the cream and cheese and cook until the mussels are open and the cheese is melted. Drain the pasts, toss with a little good olive oil and place in a pasta bowl. Spoon mussels over pasta and pour any remaining sauce over that. Garnish with Parmesan cheese and chopped fresh oregano.
