1 Packaged Cake Mix (Triple Chocolate-or see the notes in directions for variations)
*Any ingredients needed on the cake package directions (for cruising the mixes that don’t require extra ingredients are best)

1 cup Quick Oats

1 cup Craisins
½ cup chopped pecans
½ cup 60% Cocoa Chocolate Chips

Preheat oven to 350°

Put paper muffin liners in a muffin/cupcake pan

Make the cake batter per the package directions
Add oats
Mix well
Add the other ingredients. Here are some combinations, but be creative. Always use the oats.

• Chocolate cake mix, 1 cup Craisins, 1/2 cup chopped pecans, and 1/2 cup chocolate chips-60% cocoa
• Carrot cake mix, 1 cup raisins, ½ cup grated carrots
• White or yellow cake mix, 1 cup tropical mix dried fruit
• There is no end to the combos. Let me know what is great

Fill paper muffin liners 2/3 full of batter

Bake 14-16 minutes. I use a convection oven, so recommend that you keep an eye on the timing based on your oven.

I made this up on Jireh (our boat) while we were cruising in the Exumas. It was partly to use a random box of cake mix that was going to hit an expiration date, which I can’t stand, AND I didn’t have icing. You can use any type of cake mix and be creative on the other ingredients. The oatmeal and lack of icing allows this to be a muffin versus a cup cake. That makes it healthy for breakfast…right?
