2 8 oz. Packages Cream Cheese

Directions:
Directions:
Brown the sausage in a pot large enough to accommodate the other ingredients.
Drain
Return the sausage to the pot
Add the Rotel (don't drain) and the cream cheese
Heat on low until the cheese is well melted
Simmer for 15 minutes
Remove from the heat, cool, and put in the fridge until tomorrow
Yes, it is better the next day

One thing I do if I am not with the heat squeamish is add chipotle peppers. I get the canned type, puree them in a food processor, then remove the tough bits, and add some to the dip. Use a tablespoon at a time until you reach your desired spiciness... I sometimes just get the sauce from the can in the interest of time.

I have seen many variations of this recipe through the years. I got it at a friend's party in 1994. If your variation is older than that, maybe you were first:-)
